Biltong is a traditional South African beef snack with a history spanning over 500 years. It originated with the indigenous Khoisan hunters, who preserved their meat by air-drying it with salt, vinegar, and spices. When Dutch settlers arrived in the 1600s, they introduced cloves, coriander, and black pepper, creating a powerful fusion of tradition and flavor: biltong (pronounced bill-tong).
While often compared to beef jerky (though never by a South African), biltong offers a noticeably more tender texture, richer flavor, and a healthier ingredient list. Unlike jerky, which is typically cooked and loaded with sugar and preservatives, biltong is naturally air-dried for superior flavor and nutrition.
Today, Biltong is usually made from beef, though other meats such as kudu, springbok, ostrich, venison, wildebeest, and even fish can be used. The meat is seasoned with a blend of coriander, black pepper, salt, and vinegar (to prevent mold from growing).
For biltong to dry properly, the conditions must be just right: low humidity, warm temperatures, and a steady breeze. In true South African shops, you will find it hanging from rafters, windows and even coat racks! Simply walk in, pick your piece, get it sliced, and carry it home in a brown paper bag.
